A HOMEMADE TRDELNIK (4 PCS)
Ingredients for dough: 280 g plain fl our, 150 ml lukewarm milk, 35 g butter, 35 g shortening, 15 g icing sugar, 13 g fresh yeast, 3 egg yolks, pinch of salt
Ingredients for sprinkling: 200 g sugar, 1 tsp cinnamon, pack of vanilla sugar
DOUGH INSTRUCTIONS: Mix together yeast, milk and a teaspoon of icing sugar (5 g). Whisk butter and shortening with 3 egg yolks into a froth, add fl our and the remaining sugar (10 g) and mix together. Add the dissolved yeast to the dough, process well and leaveto rise for 30 to 45 minutes.
TRDELNIK RECIPE:
1. Make approx. 1 m long strips.
2. Wind them around the spit, fold the ends.
3. Roll out so that the wound strips join together.
4. Brush with butter and leave to rise for 15 minutes.
5. Cook in the oven for 20 to 25 minutes at 200 °C.
6. Turn them by one third* twice and brush with butter once during the cooking process.
7. Brush with butter again and coat in the mixture of sugar and cinnamon. 8. Remove the grip and carefully slide the trdelnik down.
*Note: The time required for cooking and intervals for rotating the spit may vary depending on the type of oven.
Notice: The spits, the holder and the silicone grips are hot during the cooking process; always use an oven mitt.
