1. For Creams, Desserts, and Fillings:
Place gelatine sheets in a bowl with 4–5 tablespoons of water and let them soak for about 10 minutes.
Heat the mixture gently (do not boil), stirring constantly until the gelatine is fully dissolved.
Add 2 tablespoons of the cream or fruit juice to the dissolved gelatine and stir well.
Mix the gelatine back into the main cream or fruit mixture. Continue processing according to your recipe.

2. For Jellies and Aspics:
Soak gelatine sheets in 0.5 liters of cold water or broth for about 10 minutes.
Heat gently, stirring constantly, until fully dissolved.
Let the gelatine cool slightly and use as instructed in your recipe.

Tip:
For savory dishes, dissolve the gelatine in a flavored broth made with water, onion, bay leaf, allspice, and pepper. Bring the broth to a boil, season with vinegar, salt, and sugar, then use it to dissolve the gelatine for a perfectly flavored aspic.
