a) Cold method – no pasteurisation
Blend 1 kg of dry mix with 2 L of cold drinking water.
Leave for about 15 minutes, whisk again and strain.
Pour into an ice-cream machine and freeze while whipping.
Dispense into servings or tubs.
Tip: Stir the mix occasionally while it rests. The prepared mix may be held at ≤ +4 °C before freezing.
b) Hot method – with pasteurisation
Mix 1 kg of dry mix with 2 L of cold water, strain and pasteurise.
Cool to +4 °C within 90 minutes.
Freeze to −8 °C or lower. Unfrozen chilled mix may be stored up to 48 h at ≤ +4 °C.
Milkshake
Ratio 1 : 4 – 1 part MIXAR® EXTRA to 4 parts water.
