Czech apple štrúdl – the smell of autumn in one roll 🍎

Every Czech family has a štrúdl story. A grandmother who stretched the dough so thin you could read a newspaper through it. A kitchen that smelled of apples and cinnamon all Sunday afternoon. A pan that was empty before it properly cooled down.

Apple štrúdl is the kind of baking that feels like autumn itself – simple ingredients, warm spices, and no need for perfection. A slightly crooked roll tastes exactly as good as a photogenic one.

Two ways to the same happiness

The traditional way is stretched or rolled dough made from flour, a little fat and warm water. Babiččina volba Plain Wheat Flour is the one to use – it is exactly the smooth, fine flour Czech recipes mean when they say “hladká mouka”. 

The quick way is ready-made puff pastry from your local shop. Nobody will judge you. The filling is what carries the memory.

Filling (for 2 rolls)

  • 1 kg apples, coarsely grated or thinly sliced
  • 2–3 tbsp sugar and a big pinch of cinnamon
  • a handful of raisins and chopped walnuts
  • breadcrumbs or ground biscuits to soak up the juice

Method

1. Roll the dough thin on a floured cloth – the cloth later helps you roll the štrúdl without tearing it.

2. Spread the apples, sugar, cinnamon, raisins and nuts, leaving the edges free.

3. Roll it up, seal the ends, brush with melted butter and bake at 180 °C for about 35–40 minutes, until golden.

4. Dust with icing sugar and try to let it rest ten minutes. Try.

Quick tips
