Rajská omáčka – the sweet tomato sauce every Czech kid remembers 🍅
Rajská is the taste of a Czech childhood, full stop. School canteens served it, grandmothers perfected it, and every Czech adult abroad eventually has the moment: standing in a foreign supermarket, suddenly craving sweet tomato sauce with bread dumplings and absolutely nothing else will do.

Foreigners are often puzzled – a tomato sauce that is sweet? With dumplings? And beef? Yes, yes and yes. Rajská does not explain itself. It just gets eaten to the last drop.
Ingredients (4 servings)
- 600 g beef (bottom round or brisket), boiled soft in one piece
- 1 onion, butter, 2 tbsp flour
- tomato puree – a generous amount
- sugar, a splash of vinegar or lemon, bay leaf, allspice, whole pepper
- bread dumplings – non-negotiable
Method
1. Simmer the beef with the spices until tender; keep the broth.
2. Make a light roux from butter and flour, add tomato puree and the broth, and whisk smooth.
3. Simmer 20 minutes, then balance sweet against sour – spoon of sugar, splash of vinegar, taste, repeat. That balance is the whole art of rajská.
4. Slice the beef into the sauce and serve over dumplings.
Quick tips
- Strain the sauce for the silky canteen texture – or leave it rustic, both camps are right.
- Rajská reheated the next day is famously better. Cook once, enjoy twice.
- No beef? Meatballs (“rajská s masovými kouličkami”) are the beloved school version.
The honest shortcut
For the weekday version, Vitana Tomato Sauce mix is the fastest road to nostalgia – and the clever spice pyramids for rajská drop straight into the pot, so the classic flavour builds itself while you cook the dumplings.
