Bramboračka – the potato soup that tastes like home on a cold day 🥔
When the first properly cold day of autumn arrives, Czech kitchens answer with one dish: bramboračka. Potato soup with mushrooms, marjoram and garlic – humble ingredients that somehow add up to the taste of home. It is the soup grandmothers made from “nothing”, and the one everyone still craves decades later.

What makes it Czech
The magic is in three flavours working together: earthy mushrooms, plenty of marjoram, and a hint of caraway and garlic. No cream needed – the potatoes thicken the soup themselves.
Ingredients (4 servings)
- 500 g potatoes, diced
- a handful of dried forest mushrooms, soaked
- 1 onion, 1 carrot, a piece of celeriac and parsley root
- 2 cloves of garlic (or a shortcut: Vitana garlic powder)
- 1 tbsp flour, 2 tbsp oil or butter
- marjoram, caraway, salt, pepper
Method
1. Fry the onion, add the root vegetables and potatoes, and dust with flour for a light roux.
2. Pour in about 1.2 l of water, add the soaked mushrooms with their liquid, and simmer until the potatoes are soft.
3. Season with garlic, caraway, salt and pepper. Finish with a generous rain of marjoram rubbed between your palms – that is the moment the kitchen starts smelling like home.
